Ham muffins with wild garlic

Ingredients for 12 portions

  • 1 small Onion
  • 1⁄2 bunch Wild garlic
  • 70 g Low-fat butter
  • 2 Eggs
  • 100 ml Single cream
  • 50 g Low-fat cream cheese
  • 130 g White flour
  • 1 tsp Baking powder
  • 75 g Lean ham, cubed
  • 1 pinch Iodised salt
  • 1 pinch Pepper
  1. Peel and dice the onion. Wash, dry and chop the wild garlic. Preheat the oven to 200°C (gas mark 3, fan-assisted 180°C).
  2. Whisk together the butter, eggs, cream and cream cheese and stir in the flour and baking powder. Add the onion, ham cubes and wild garlic to the dough and season with salt and pepper.
  3. Put the dough into 12 silicon muffin tins or paper cases and bake in the centre of the oven for about 25 minutes. Serve the ham muffins.
