Spicy courgette and parmesan boats

2 tspLow-fat butter, up to 40% fat
4 tbspParmesan or grana padano cheese, grated
1⁄2 tspLemon peel (unwaxed), grated
1 tbspThyme, chopped
1 pinchSea salt
1 pinchPepper
2 springsBasil


  1. Preheat the oven to 180°C (gas mark 2, fan oven 160°C). Wash the courgettes, split lengthways and remove the pulp with a spoon, leaving about 1 cm thickness. Chop the courgette pulp.
  2. To make the filling, cut the bread into small cubes and knead together with the butter, parmesan, courgette pulp, lemon zest, thyme, salt and pepper.
  3. Place the courgette halves in an ovenproof dish (approx. 24 x 28 cm), fill with the parmesan mixture and bake in the centre of the oven for about 20-25 minutes until golden brown. Wash and dry the basil and pick off leaves. Serve the courgette and parmesan boats with a garnish of basil leaves.
